As different type of food has different
properties and different time of spoilage. Some foods spoil very rapidly while
some does not spoil easily. In order to prevent food from spoilage it is placed
in freezers. Freezers provides the suitable environment that prevent it to be
spoiled. Refrigeration of food has some impact on the quality and nutritional
value of food.

INTRODUCTION:
Food storage is both a traditional, domestic skill and its
important industrially. In old ages people makes their own ice boxes and
insulate it with different natural materials. Underground storage is another
widely used technique in the old centuries to protect food from spoilage like
potatoes and ghee are placed under the ground for several time period for its
protection from bacteria and other microbes but this technique causes a change
in the texture, flavor and color of butter and also the nutritional value are
completely changes. Sun drying is another method through which the moisture
content from food are removed and stored it for a long period of time. This method
are still using in different rural areas like Gilgit Baltistan. As moisture
content in food provides the environment for bacterial growth by removing it
food can be stored for a long period. As these domestic and traditional
techniques increases the shelf life of food but it also impacts the natural
food texture, color and nutritional value. That is why with the passage of time
new techniques was developed to protect food in a more precise way like
refrigeration, heated cabinets and heated carts in trucks. Food storage prevent
food from spoiling and stored it for a large period of time. There are a
variety of methods through which food can be stored for a large period of time.
Categories of food storage in
fridge:
There are three categories or methods through which a food
storage can be stored:
- Refrigerator and freezing storage
- Heated cabinets and serving counters for cooked food
- Refrigerated and heated carts and trucks used to deliver prepare food from a central production unit of various facilities or units where food is served.
Food storage in fridge:
Storage in fridge can be define as food that require storage
at a cool temperature. Refrigeration or cooling process is the removal of
unwanted heat from selected object, substance or space and its transfer to
another object, substance or space.
Why there is a requirement of food
storage in Fridge?
Some foods need to be kept in the fridge to help stop or
slow down bacterial growth and keep them fresh and safe for longer. Generally,
the colder the temperature the slower the bacteria will grow.
Benefits of food storage in fridge:
The benefits to store foods in freezer are:
Increase freshness, increase shelf life, slows the activity
of bacteria and microorganism’s growth, prevent the spoilage of food.
Adverse effect of food storage in
freezers:
As everything has both good or bad impact. Likewise,
refrigeration of food also has a bad impact. Some of the bad impacts of food
refrigeration are:
- Loss of essential nutrients
- Loss of color
- Loss of flavor
- Loss of texture
- And after 3-4 days’ bacteria may also begin to grow.
What kind of food need

Some food provides favorable condition for bacterial growth.
These foods may include proteinicious food, highly perishable food and some
other foods provides the conditions for bacterial growth.
Bacteria can also easily grow in Nutrients rich and low
acidic foods.
Foods like meat, fish, cheese, and other leftovers.

refrigerated?
Bread, oils, onions, potatoes, garlic, bananas, honey etc.
are some foods which are suitable without refrigeration. These foods have a
moderate perishability, high acidic and other than proteinicious nature due to
which bacteria and other microorganisms cannot grow on it easily.
Rules for Food refrigeration:
There are some rules for refrigeration of food in fridge
these are:
- Store all the foods in wrapped or a container.
- Store food quickly.
- Avoid over load your refrigerator.
- Keep your refrigerator below 40F.
- Once a week clean your refrigerator.
- If food is moldy, discard it in a wrapper so mold spores do not spread.
- Store raw and cooked items separately.
- Store raw meat below and all other above.
- Do not store food hot in refrigerator.
